Well, Slashem is harder. But that's nethack with even more evil stuff in it.

I'd certainly say Angband and the 'Band likes are a lot harder. I've beat NetHack more times than I count, but beat TOME (a Angband-like) twice. Angband is just way longer than NH, so it is almost guaranteed to be harder. Also, I'd say that in NH by the end of the game, you're overpowered, in Angband so is everything else! In other words, it's just as easy (for me) to die in the end of Angband, but I never die near the end of NH (except for once on the astral plane.)

Feory - Nethack, Angband (and various variants), ADOM and Crawl are the few that seem to stand out to me as most popular. Nethack I've won half a dozen or so times with a few different challenges and got bored. ADOM I've won twice, no special endings, and I was this close to winning TOME once.

I think the hardest one is Iter Vehemens ad Necem. While I've never played it, apparently the devs consider winning the game to be a glitch.
